Low-Carb Lettuce Tacos
Last night I found a way to make Low-carb tacos that worked for us. I love the flavor of tacos but I don’t always want the carbs and the fat from traditional tacos. These gave me the flavor of a taco without the shell. I loved them and wanted to share them with you.
2 pounds Ground Beef
Salt to taste
2 Tbsp Penzey’s Chicago Steak seasoning
10 large lettuce leaves washed and dried but kept whole (I used some Green Leaf and some Red Leaf for variety)
Homemade Almost Salsa (click for the recipe)
1 green chile chopped
2 scallions chopped
Cook the ground beef on low, add Chicago Steak seasoning. Prepare the other ingredients and serve.
For the kids: I added Spelt Tortillas, chopped avocado, sour cream, and cheddar cheese.
This worked because I served everything in separate dishes so everyone could build their own taco. This allowed the kids to make tacos they liked in the tortillas, while we were able to have a delicious veggie heavy, low-carb lettuce taco. Everyone was happy.
