Mostly Raw Fudge
I have an almost illogical love of Raw Foods. Something about the simplicity of the food arouses my food passions. A few years ago I made my family crazy by feeding them raw food for a month. I stopped because everyone started making excuses to eat somewhere else besides our home.
When I am treating myself to a snack, I often pick something raw. It is usually an inherently healthy treat. Even if raw food isn’t a great weight loss strategy, it feels healing to my soul.
I love eating raw desserts and this is a dessert made from mostly whole foods. It does have some vanilla extract which isn’t technically raw but a substitution could be made to use vanilla bean.
1 cup raw organic walnuts
1 cup organic dates with pits removed
6 tablespoons raw cacao
1 teaspoon vanilla
1/2 teaspoon sea salt
1/4 cup walnuts finely chopped
Soak the walnuts for 4-5 hours. Discard the water and add nuts to food processor. Process until fine. Add dates a little bit at a time. Add vanilla, cacao and sea salt. I add these through the top while the processor is going. Process until very smooth. Spread onto a piece of parchment on a smooth surface. Fold the parchment around all 4 edges and over the top.
Roll with a rolling-pin. This will allow you to smooth it out into a square. When your square is finished, top the fudge with the finely chopped walnuts. Refrigerate. Cut into squares and serve.
